Last I knew, the College of the Atlantic in Bar Harbor, Maine offered an accredited undergraduate course on taxidermy techniques. Most of the resulting work is exhibited in the College's Natural History Museum <http://www.coa.edu/nhm/>, directed now by Gail LaRosa. Course was broad-based, covering a variety of subjects including: study skins, artistic mounts and dioramas creation, plant preservation techniques, even casting of amphibians and reptiles. Not sure if it's still being offered. Professor is/was Skip Busy-Basso.
