Dermestid beetles are probably your best bet. If you don't leave the carcass in the colony for too long you end up with a nicely articulated skeleton.

Subject: [NHCOLL-L:4220] maceration question
Hi Everyone!
What is the best way to macerate a bird leg (Guinea Fowl) while
keeping the cartilage and ligaments intact?
Thanks!
Abby
