I gave up wheat a while back, haven't eaten it for years, but that is
some kinds of wheat gluten. It's a genetic thing. Oats, rye, barley,
millet, teff etc. are still ok.
Maize/corn is indeed complexly modified by selection and interbreeding,
and the results have been tested by humans for thousands of years. It is
also delicious when modified by fungus to produce huitlacoche. I don't know
how much of that spliced/chimaera stuff is foisted off on us now because it
is not labelled. Luckily there are still a number of "organic" producers
around. I have noticed that most of the fresh corn in supermarkets does not
pass my sniff test. It smells wierd, like old soil. I don't buy it. Once in
a while an old fashioned batch appears. I buy it and enjoy it. I choose to
be as fussy about my food as some people are about their wine. Road food is
real difficult.
I suppose you are one of those genetic mechanics who are trying to change
our food for profit, without telling us, figuring we will not notice?
